November’s Supplier Insight – P.O’Connell & Sons Ltd.

P.O’Connell & Sons Ltd was started by Patrick O’Connell as a family butcher shop in Barrack Street in Cork City in 1966. P.O’Connell & Sons is now a thriving family owned meat specialist business employing 20 people locally across two premises in the Lough and Wilton in Cork. At our purpose built production facility in Wilton, covering over 10,000sq ft, we source, process and distribute top-quality local meat produce to hotels, restaurants, butchers, pubs and the catering trade throughout Munster. We work closely with our customers to tailor a meat supply service that’s delivers Quality, Consistency and Value.

Quality Management / Assurance:

P.O’Connell & Sons is registered with the Food Safety Authority of Ireland in conjunction with the Veterinary Department of Cork County Council and assigned plant number IE 2537 EC. 

We strictly adhere to all the FSAI regulations, including full traceability of all products back to farm of origin and the implementation of a full HACCP programme and are accredited with Food Safety Authority of Ireland (FSAI) for European Standards.

We have an in-house qualified Quality Assurance Manager, who along with our qualified production team work closely with the Veterinary Inspectors to ensure the highest of quality standards are maintained consistently.

Food Safety & Traceability


Food Safety is the foundation that drives every process within P.O’Connell and Sons. Our Food Safety policy focuses on prevention of any contamination from start to finish in our production cycle.

All our products are traceable back to farm and are slaughtered, produced and packed in line with all relevant EU legislation in regards to Animal Welfare, Food Hygiene, Food Safety, Quality and Legality.

We maintain rigorous monitoring of all of our meat suppliers, through strict Supplier Qualification Standards, regular supplier on-site visits, product testing and strict in-house quality control procedures.

As an organisation we continuously strive for improvement by equipping and training our staff and constantly reviewing our systems to achieve a uniform mechanism for recording and monitoring our meat processing with a view to achieving continual improvement in standards.

We place a major emphasis on our robust traceability system which satisfies both our customers’ needs and legislative requirements.  We know that complete traceability from farm to final product is critically important to all our customers at all times. And our experience has shown us that by having this rigid traceability system, our customers can have every confidence in the superb quality of our products at all times.

Compliance with Product Specification:

With over 50 years experience supplying the Catering Trade we have an excellent knowledge of the specifications required by our customers and do everything we can to meet these specifications every time. In addition, we can guarantee that all our products comply with all current and future National & European statutory regulations at all stages of the process from rearing of the animals to delivery of the end product

Customer Service
We consider our customers to be a valued partner based on mutual trust and shared expertise. We don’t believe in resting on our laurels, we strive to go above and beyond the service of our customers expect each and every day.

To this end Keith Sheehan, our General Manager, is available to visit any of our customers at any stage and can deal with any product queries or changes including pricing and sampling of new products as required.

Keith also deals with any complaints on products and/or service and guarantees a swift response every time – no matter how small the issue.

We operate a 24/7 On-Call service for Weekend / Emergency Deliveries.

Daily Delivery Schedule

Due to the perishable nature of our product, P.O’Connell & Sons’ deliver daily 6 days a week Monday to Saturday. The transport staff at P.O’Connell & Sons are rotated in such a way that there is always a driver on call for Sundays, Holidays and Bank holidays for those little emergencies that all kitchens experience from time to time.

Testing

P.O’Connell & Sons maintain a close working relationship with the accredited laboratory ALT Ireland Ltd. As part of our routine monitoring programme we contract ALT to conduct swab sampling of our premises, the testing of these swabs, water and meat samples are completed at their state of the art facilities using highly trained staff using the most current up to date sampling methods.

Packaging
We use sterilised plastic trays lined with polythene food grade quality bags when delivering all produce. We can offer Vacuum Packing, Shrink-Wrapping and Cling Wrapping, all of which ensure clean delivery and longer shelf life.

Labelling
All our labelling complies with National and European Food Labelling Standards and we double labels so that our customers can meet their HACCP requirements.

Invoicing
We operate a fully computerised Invoicing System which allows us to provide our customers with copies of P.O.D.’s, monthly statements via email etc.

Dealing with product recalls
We firmly believe in the integrity of our products and operations – and we always will.  However, in the unlikely event that a product has to be recalled, our fully integrated labelling and traceability systems would allow us to contact our Customers immediately to notify you of any re-calls and to remove the products immediately from the food chain.
